Menu Plan Monday: Moroccan Chicken, Meatball Soup, Crockpot Corned Beef

Back in the day, I used to plan my menus each week. The whole family would sit down together on Sunday morning for a family meeting, and we would talk about the plans for the week, who was out what night, what after school activities were going on, how the week was going to run. Sunday afternoon I would head to the store with my list and buy all I needed for the week.

Meal planning is great – not only do you save money and help your food budget by shopping to a plan, it also helps with portion control and weight loss. If I make a dish and know I needed to have leftovers the next night, I will put out only what I have budgeted (financially and calorically) for the one meal.

When we started subscribing to a CSA (Community Supported Agriculture, or Veggie Box, as we like to call it) my menu planning took on a different twist. Now I had to plan around what was in the box, what was fresh and in season. That was fun and often times, very challenging. Some meals would be 3 or 4 veggies, cooked any which way, just because they were about to go bad! Our CSA starts up again next week, so this week, I was free to choose from the millions of recipes I have clipped from magazines and newspapers.

Today, as I look at the rest of the week, I realize that unless I plan my weekly menu, things are going to get ugly. So, here is my menu plan for the week of March 9th:

Monday – Moroccan-spiced Chicken, carrots, sauteed spinach – from Martha Stewart Living, February 2009

Tuesday – leftovers chicken, after basketball practice

Wednesday – adults out, Carmelized Vegetable and Meatball Soup – from Sunset Magazine, January 2009

Thursday – leftover soup

Friday – Basketball team party

Saturday – Basketball team party

Sunday – First run at a Crockpot corned beef and cabbage
