This weekend, we celebrated a birthday and an anniversary, so there was lots of cooking to keep me busy. The best thing I made this weekend was an Orange Cheesecake with Candied Kumquats (and Blood Oranges) which used up the cute kumquats from our Frog Hollow CSA box.
I don’t normally write a plan about our Frog Hollow box, since fruit is easy to eat and pack for lunches. However, the kumquats threw me for a loop, so I needed to find recipe ideas. The Orange Cheesecake, from the Epicurious site, was outstanding – my guests claimed it was the best cheesecake they had ever tasted. That good.Anywho, our Two Small Farms CSA box came on Friday, and included Chard, Orache, Strawberries, Oranges, Leeks, Cilantro, and Young Fava Beans. Strawberries and oranges will go in breakfast yogurt parfaits and lunches, respectively. For the rest of the items, here is my menu plan for the week of April 19th:
Sunday: Spring anniversary dinner – Steamed artichokes, Fred’s Steak, roasted asparagus, chard souffle, orange cheesecake with candied kumquats
Monday: Leftovers, with sautéed orache and roasted sweet potatoes
Tuesday: Slow-cooker Mexican-style Chicken and Hominy Stew (using the cilantro), corn tortillas, green salad
Wednesday: Cilantro-pesto salmon, roasted baby fava beans and leeks, brown rice
Thursday: Crock-pot Korean Ribs, rice, carrots with ranch dressing (very popular from last week)
Friday: TGIF and Movie Friday

Monday Shout-out to Deirdre for providing inspiration for last Friday’s south-of-the-border dinner – grilled flank steak with spicy green salsa, homemade refried pinto beans and avocado and citrus salad. Thanks for the suggestion, turned out to be a great family dinner!
