My Monday Menu Plan: Beets

We join a community pool for the summer, and starting today, they light the BBQs and members bring picnics and grillables and enjoy the longer days and late afternoon swims. I am starting to plan my menu around food that easily portable. I bought a super cute tiffen box from Target to carry all my picnic food <insert photo here> and am pretty thrilled to debut it today.

In our veggie box from Two Small Farms, we found Strawberries, Italian Parsley, Chantenay Carrots, Loose Spinach, New Potatoes, Gold Beets and Summer Squash. Here is my menu plan for the week of May 31st:

Monday: Carrot salad with jicama and pineapple, whole wheat noodles with herb pesto, hotdogs

Tuesday: Roasted beets with balsamic, roasted potatoes, rotisserie chicken in the crock pot

Wednesday: Grilled Fish with Preserved Lemon Tzatziki, grilled summer squash with mint, sauteed spinach, bread

Thursday: Leftovers

Friday: TGIF and mini-block party (last week, I went all Trader Joes – White Bean and Basil hummus with pita triangles, Onion dip with chips and Chicken Potstickers)
