Technically, it is still spring, but the first cherry tomatoes appeared in our box this week. Oh the joy. I don’t even think they made it through the night, all I found the next morning were little green tops strewn about the counter. Definitely a favorite here at our house, and much welcomed after a winter without!
The rest of our box from Mariquita Farms featured Carrots, Lettuce, Strawberries, Bacon Avocados, Japanese Pickling Melons, Kohlrabi and Lacinato Kale. I promise I will get to the Japanese Pickling Melons this week. Oh, and did I tell you I am doing a refresher Whole30 (or more likely Whole12), to get ready for summer? I need to be reminded that sugar is not an everyday food.
My menu plan for the week of June 2:
Sunday: Grilled rib eye, steamed asparagus, roasted new potatoes, kohlrabi/onion/micro green salad with capers
Monday: Roasted salmon, salad, braised carrots, kohlrabi pickles
Tuesday: End-of-softball-season Dinner out
Wednesday: Picnic in the park with music – Kale, Strawberry and Avocado Salad, Paleo Oven Fried Chicken, Japanese Pickling Melon and Red Onion Salad (sort of like this)
Thursday: Dinner out on way to a show
Friday: Chili Cookoff and TGIF!
