My CSA Box: Stacking up this summer

The last few weeks have been a little busy at home and we have not been getting through our weekly boxes from Fifth Crow Farms. So this week, I have a little makeup to do!

In our box this week, we found Carrots, Collard Greens, Strawberries, Raspberries, Artichokes, Baby Kale, Cucumbers, Leeks, Dill, and Savoy Cabbage. In addition, in my fridge, I found Parsley, Zucchini, French Radishes, Beets, more Carrots, another Cucumber, 1/2 a Green Cabbage, Sage, Fennel, Turnips, Broccoli and Basil. I also have loads of peaches, nectarines and plums from our Frog Hollow Farms CSA. Wow, I have my work cut out for me. And if I fail, there is always the chickens.

Here is my menu plan for Thursday, July 20 – Wednesday, July 26:

Thursday: Pizza of the day from Cheeseboard Collective – Heirloom Tomato Ranch Pie!

Friday: Roasted halibut, steamed artichokes, roasted broccoli and turnips, rice

Saturday: Grilled pork chops, grilled peaches, cabbage and radicchio coleslaw, green salad

Sunday: Potluck with friends, I will either make a Cherry Tomato Galette or Zucchini, Tomato, and Rice Gratin. I will probably also put together a crudite plate with cucumbers, carrots, and radishes with a Green Goddess Dip, as well as a batch of Fresh Mint and Ginger Lemonade, because it works well with and without alcohol.

Monday: Stuffed Collard Greens, cauliflower rice, grilled zucchini

Tuesday: Green chili chicken enchiladas, green salad

Wednesday: Vaguely Vietnamese Slow Cooker Pork Tacos, with cabbage slaw and tortillas

And things for the fridge: Basil Pesto, Pickled Beets, and Stone Fruit Jam (in small jars for holiday gift giving).
