I was sorting through the stack of recipes on the counter, trying to find a cookie recipe for this week’s cookie decorating with Donna (we get together every month during the school year and decorate cookies with flooded icing). Found all sorts of treasures, recipes made in the past year or so that our family enjoyed. Some have notes about quantities or substitutions, others just have a “great!” or “excellent!” with a date. I make the same notes in cookbooks I use often, it is a sign that the cookbook has been accepted into the family.
Our box from Fifth Crow Farms contained Buttercup winter squash, Yellow onions, Beets with greens, Peppers, Baby kale, Melons, Red potatoes, Radicchio, and Collard Greens.
Here is my menu plan for October 22-27:
Sunday: Pork meatballs, rice-stuffed tomatoes, Amish turnips, braised beet greens
Monday: Pasta with collard greens and onions, leftover meatballs
Tuesday: Taco Tuesday! Sizzling Pork Tacos with salsa, corn tortillas and a pot of beans
Wednesday: Roasted chicken thighs with Delicata squash, baby kale salad
Thursday: Dinner out after XC meet
